Whether it's nougat, caramel, compound coatings, icings or cake decorations, we have a whey ingredient to meet the functional and economical needs of your application. Formulators of white chocolate have even more options now, with the standard of identity for white chocolate allowing up to five percent of whey or whey products as optional ingredients.

Nutritek® demineralized whey is available at several different levels of mineral reduction. These products are specially engineered to reduce the sweetness and contribute a uniform grain to compound coatings and icings where a low level of salty flavor is desired.

Daritekwhey protein concentrates can provide enhanced gelation and whipping properties along with the browning properties of whey ingredients for your confections. The flavor and texture of your caramel, nougat and marshmallow applications will be enhanced with these whey protein concentrates.

Lactose is available in several edible forms. Crystal size and type is tightly controlled to provide the desired solubility, mouthfeel and physical properties. Lactose provides the functional properties of a crystallizable sugar without the sweetness of sucrose. Panned candies, marshmallow, hard candy and caramelized confections will all benefit from the functionality of lactose.
